Chocolate Mousse

Dark Mousse
Ingredients
for 10 portions

200 g dark chocolate
1 egg
2 egg yolks
25 g sugar
2 cl Creme de Cacao Brown
0.3 l cream

Preparation

    
* Chop chocolate
    
* Dissolve in a water bath
    
* Egg and egg yolks with sugar until warm and cold
    
* Liquor and liquid chocolate mix into the egg mass
    
* Whipped cream
    
* A container and cool for at least two hours

White Mousse

Ingredients
for 10 portions

200g white chocolate
1 egg
Two yolks
2 sheets of gelatin
25 g sugar
2 cl Creme de Cacao
0,25 l cream


Preparation

    
* Gelatin soak in cold water
    
* White chocolate cut into pieces
    
* Dissolve in a water bath
    
* Egg and egg yolks with sugar until warm and cold
    
* Softened gelatin into the warm egg mixture to give
    
* Liquor and liquid chocolate mix with the egg mass
    
* Whipped cream
    
* A container and cool for at least two hours



Reference

The addition of whipped egg white can make a mousse or dizzy.
The basic recipe is one of two egg whites to the snow.
In order to achieve the necessary bond, two sheets gelatin
also admit.
In case of dark mousse that is 2 sheets and the light mousse four leaves.
